Deep Fried Sweet Potato and Shrimp Dumpling


   My recipe for this dumpling is sort of like lumpia or spring roll. Usualy, I make the filling with potato, but this time I try with sweet potato and it's delicious. The sweetness from sweet potato mix with savory taste from shrimp give an unique taste. Let's start cooking. 

Ingredients :
Dumpling wrappers (for about 10-12 wrappers)
- 100 g all purpose flour
- 200 ml water
- 1 middle sized egg
- a pinch of salt
- vegetable oil 

Filling
- 200 g sweet potato
- 3 tbsp condensed milk
- 1 tbsp corn flour, mix with 2 tbsp water
- 200 g shrimp
- 100 ml water
- 3 cloves garlic, minced
- 3 cloves onion, sliced and fried
- celery and green onion, chopped
-a pinch salt and pepper

Instructions :
For wrappers : Mix all ingredients and stir well. Heat up non-stick pan to medium heat and brush the pan with vegetable oil. Pour 2 spoon of batter and swirl to make a round crepe in the pan and let it cook.

For filling : Heat vegetable oil in pan, add garlic and shrimp, cook and stir until the shrimp change colour. Then pour water and sweet potato cook until soft, pour condensed milk and corn flour liquid, stir. Last, add celery and green onion, seasoned with salt and pepper. Let it cool completely before wrapping.

Finishing : wrap the dumplings with filling inside and heat up oil for deep-frying. Deep fry the dumplings until golden brown. Serve hot with chili sauce. #Happycooking
