Indonesian Classic : Nastar (Pineapple Tarts)


This Nastar is like traditional tarts in my family for Lebaran day. A must have for Lebaran in my hometown. Nastar actually stands for Nanas tarts (Pineapple tart). Nastar is basically a cookie with pineapple jam filling. And homemade jam is the best for this tarts with fresh and strong pineapple aroma. The best Nastar is the one that can melt-in-mouth. This recipe is definitely can melt-in-mouth #yummy





INDONESIAN CLASSIC 
NASTAR / PINEAPPLE TARTS


Ingredients :

For the tarts 
300 g butter
50 g refine sugar
4 egg yolks
100 g milk powder
50 g cornstarch
250 g flour

For the filling / Homemade Pineapple Jam
1 medium size pineapple ; peel, chop and make pineapple puree (do not add water)
200 g sugar
1 stick  (5 cm) cinnamon
3 cloves
Pour pineapple puree, cinnamon and cloves into skillet, cook with medium heat until the water reduced, Add in sugar and cook over low heat and stir from time to time until thick.

For egg wash
2 egg yolks
1 tbsp honey
1 tbsp milk
Combine all the wash ingredients and beat awhile with spoon

Instructions :
1. Beat butter, refine sugar and egg yolks for 2 minutes
2. Add cornstarch, flour, milk powder to batter 1 and combine well with  spatula until become a soft and not sticky batter
3. Roll the batter into ball, flatten the ball, place pineapple jam in the middle and cover the filling back into ball shape. Then make the pineapple fruit pattern with tiny scissor.
4. Apply egg wash gently with a brush
5. Bake for 25 - 30 minutes or until golden brown in medium heat (180 C)
6. cool completely before storing in airtight jar
